monday munchies / babycakes

banana, cinnamon, oatmeal babycake

i have been trying to perfect a babycake / pancake
and i think i finally got a winner!
i'm a fan of bananas and applesauce for baby baking.
luckily we are visiting the grandparents and 
got to use all of nonni's awesome cooking utensils 
she also has a griddle, which is great for pancakes.


ingredients:
1 mashed up banana
1 cup whole wheat flour
1/2 cup quick oats [you can also use baby oatmeal]
1/2 cup of soy / almond / breast / whole milk (you pick!)
1 egg
1 cup applesauce
1/2 teaspoon cinnamon
a little bit of butter to grease the pan

mix together your "mushy" ingredients first (eggs, applesauce, banana, milk)
in a separate bowl mix up your dry ingredients (flour, oats, cinnamon)
mix them both together and stir for about a minute.
take small spoonfuls to your  buttered pan / griddle. 
try to flatten out a little with a spatula so the center isn't really gooy.
they should cook until golden on both sides. 

to spice it up a little: in a side dish, add about 1/4 cup applesauce 
with a dash of cinnamon for a "syrup dip"
also: add some chopped up fresh fruit.

my taste tester approved. and liked dipping fingers in the apple sauce.
