monday munchies / cauliflower pizza


lets start off by saying, cauliflower makes me gag. but i'm always down for a food experiment. and this one turned out absolutely delicious. even the little man loved it. pretty fun and easy to make.
we actually made this pizza twice already. once with lots of veggies and once with lots of cheese :)

ingredients:
crust
1/2 head of cauliflower
2 eggs
1 cup of mozzarella cheese
2-3 cloves garlic minced
herbs (basil, oregano, rosemary) 

toppings
mozzarella cheese
parmesan cheese
basil leaves
pizza sauce
olive oil
(other options: bell peppers, onions, jalapenos, etc.)

preheat oven: 425 degrees. chop up cauliflower and put in food processor. you want the cauliflower to be chopped up enough to resemble rice. next, put the ricey looking cauliflower in a microwaveable bowl, and microwave for 5 minutes. now add your eggs, 1 cup of mozz cheese, garlic, and spices to the cauliflower. its okay if its a little runny. grease a baking sheet, and flatten out your crust with hand or spatula. the thinner the better, i say. throw this crust in the over for about 15-20 min until edges look crisp. now your crust will look more like bread! the baking sheet will be hot, if you have a little helper, warn them about this, (as linc would say "its ot ot") so they can add toppings without getting burnt! add your toppings. we put olive oil first, then sauce, then herbs, cheese and veggies. cook for another 10-15 min until your cheese starts bubbling. mmmmmm. 

side note: we got lucky and got fresh herbs from aunt denise's garden! lucky us! picked our own basil and rosemary. basil flowers are also delish.
