monday munchies / kale broccoli cheddar quiche




ingredients:
1 pie crust (classic simple recipe, or buy pre-made like we did)
1 cup of cheddar cheese
1/4 cup parmigiana cheese
4 eggs
2 cups of broccoli florets
1 cup of kale (cut up in little pieces)
1 cup of almond milk (or any milk)
salt & pepper
1 1/2 cups of diced onion (yellow or red)
pinch of nutmeg & cayanne pepper
2 tbsp olive oil

preheat oven to 350 -- we made sure all the veggies were finely chopped. in a sauce pan, pour 2 tbsp of olive oil, add broccoli, kale, and onions. let simmer for about 5-8 min. press out pie dough (i used my fingers and no need for rolling pin). in a separate bowl, mix the milk, eggs, spices. pour the sauteed veggies onto the pie crust. then add the cheddar cheese, then the egg/ milk mixture. its good if your veggies are sticking out of the top, it will give them a nice crunch once baked. finally add some parmigiana cheese on top. bake for 25-30 min, until the center isn't giggly. let cool and EAT!
