monday munchies / chickpea patties with cucumber yogurt dip



ingredients:

chickpea patties:
- 2 cans of chickpeas
- 2 eggs
- 2 tbsp of scallions (thinly sliced)
- 6 tbsp of olive oil
- 1 cup panko bread crumbs
- 1 shallot (minced)
- salt & pepper
- 1/4 cup cilantro (minced) 
- 1/2 tsp cayenne pepper
- 1 tsp garam masala


cucumber yogurt:
- cucumber (diced)
- 1 cup plain greek yogurt
- pinch of cilantro & scallions

pulse the chickpeas in a food processor until they have a rice consistency. mix eggs, spices, oil, onions together in a bowl. make patties. fry for a few minutes each side. mix together the cucumber yogurt ingredients. and you are ready to eat! have fun with the shape of the patty, make them into "tenders" for easy dipping for all those veggie kids.


lincoln loves "dipping" and loves yogurt. 
this is a great healthy meal or snack for sticky toddler fingers.

monday munchies / mini apple & blueberry cobbler

for those late night cravings...

ingredients:
crumble top
1/2 cup flour
1 tablespoon of flaxseed meal (optional for some extra fiber)
1/4 cup of brown sugar
2.5 tablespoons of sugar
4 tablespoons of butter (cold and diced)
a few shakes of cinnamon

fruit bottom
1 apple peeled and diced
1 cup of blueberries

preheat oven to: 350 degrees

this makes enough love for 2-3 people. depending on the size of your ceramic dish (this one pictured is 4" and makes two.) for the crumble top, the trick is to add butter last. throw all your dry ingredients in a bowl. chop up your butter and knead the butter into the dry mix with your hands until its crumbly and all mixed in. spray / grease your ceramic dishes, add your fruit evenly. top with delish sugary crumble. bake for 20-25 min. let cool for a more crunchy crust.. if you can..
