monday munchies / sweet potato & banana muffins with oxo tot


getting wild over here with thanksgiving leftovers and [oxo tot]

a very simple and healthy recipe.

ingredients: 
- 2 ripe bananas
- 1 medium sweet potato (cooked) - maybe you have some leftover sweet potato casserole? 
- 3 eggs
- 1/2 cup nut butter (almond butter or peanut butter)
- 1 tsp cinnamon 
- (optional toppings; cran-rasins, chocolate chips/chunks)

preheat oven to 350 degrees. mash up the banana and sweet potato, add nut butter, cinnamon, and egg. mix and mix. pour into muffin tin. (add any optional toppings) bake for 15-20 min.

monday munchies / chewy no-bake chocolate almond granola bars


this has been on my to do list for a while. lincoln and i both love granola bars. such an easy snack to take on the go. and its always healthier when you make it yourself.





ingredients:
1 cup almond butter
1/2 cup honey
1/2 cup of coconut oil
2.5 cups of rolled oats
1 cup chopped almonds
1/2 cup of chocolate chunks and some extra for topping

put almond butter, honey, and coconut oil in a pot on medium-low heat, until mixture is smooth. remove from heat and stir in oats, chopped almonds, and chocolate chunks. line a baking pan with parchment paper, pour in your mixture. refrigerate for about 2 hours. chop into bar shapes. and your good to go! store in the refrigerator. good for about 2 weeks.
