monday munchies / sweet potato & banana muffins with oxo tot


getting wild over here with thanksgiving leftovers and [oxo tot]

a very simple and healthy recipe.

ingredients: 
- 2 ripe bananas
- 1 medium sweet potato (cooked) - maybe you have some leftover sweet potato casserole? 
- 3 eggs
- 1/2 cup nut butter (almond butter or peanut butter)
- 1 tsp cinnamon 
- (optional toppings; cran-rasins, chocolate chips/chunks)

preheat oven to 350 degrees. mash up the banana and sweet potato, add nut butter, cinnamon, and egg. mix and mix. pour into muffin tin. (add any optional toppings) bake for 15-20 min.

monday munchies / sweet potato taquitos

so yes.. it's definitely tuesday and not monday. actually its almost wednesday..
BUT these are so delicious i needed to share. 





ingredients:

1 tbsp butter
1/4 cup olive oil
10 flour tortillas
3 large sweet potatoes
1 can corn
1 can of black beans
1/4 onion diced
1 cup of cheddar cheese
(guacamole optional for dipping)

cover sweet potatoes in a light coat of olive oil. put them in the oven (on the rack or a cookie sheet) for about 45-60 min on 350 degrees. once cool, peel the skin of the sweet potato off and either dice or mash them.
in a large bowl, add all your ingredients (mashed sweet potatoes, corn, black beans, onions, cheese) mix and mix and mix
put a lump of the mixture on the corn tortilla and roll it.
in a small bowl mix together (melted butter) and oil. brush the tops with butter & oil mixture
bake them for 10-15 min on 350 degrees.

if you want more of a crunch you can leave them in a little longer. they taste great dipped in guacamole. and if you only feel like making 5 taquitos you can save the other half of the mixture.

side note: my ingredients have measurements but i would sort of work to your own taste. i put the whole can of black beans and 1/2 can of corn. but hey, maybe you like it more even.
